Running thirty holiday bookings out of one room in six weeks means one base tableware spec and a thin seasonal overlay, not thirty separate orders.

Thirty bookings between the second week of November and the twenty third of December. Some days hold two, a lunch and a dinner, with about ninety minutes between the last guest leaving and the first guest arriving. That ninety minutes is the constraint that should decide every purchasing choice you make for the holiday banquet season.

Not the menu. Not the theme. The turnaround.

The turnaround clock is the real spec sheet

Break the ninety minutes down honestly. Clearing and bussing takes a chunk. Re dressing tables takes another. Anything that requires a decision from a supervisor eats the rest.

Which means the tableware needs to be identical between the two events. Same plate, same napkin, same cup, same cutlery. Your team should be able to reset without looking at a sheet. Anything that varies has to be small, fast to place, and visible from the door, because that is what the incoming client will actually notice.

Ordering the whole season at once feels prudent and generally means cases stacked somewhere they should not be by the first weekend in December.

Stop customising per client

The hardest habit to break. A client asks for their brand color in the napkin, you say yes, and now booking twenty two has a napkin that appears once and leaves you three quarters of a case forever.

Offer the overlay, not the base. Clients get their color in the runner, the centerpiece and the dessert plate, and the plates and cutlery stay identical across the season. It reads as considered rather than restricted, and it is the only version of this that survives December.
