So the question is not what looks good. It is which cases turn twice before Thanksgiving.

A few habits worth building into the buy:

  • Order plates and napkins in the same trip. Customers who buy one almost always want the other, and a split delivery costs you the attachment.
  • Stage the second buy for late September, once you have three weeks of real scan data instead of a guess.
  • Keep dessert plates on the list for your top two teams only. They are a genuine add-on, not a base item.
  • Do not let a division rivalry dictate your assortment. Stocking the visiting team is a nice idea that mostly generates markdowns.

The mistake worth naming

Stop buying one case of everything. A single case each of eight teams looks like a complete department and performs like a clearance rack, because no team gets enough facings to read as a destination and every team leaves a partial case in the back room in January. Two teams stocked properly outsell eight teams stocked politely, and they leave you with far less to write down.
